Stir fried dog anyone?

If you have a dog for a pet, you don't want any danger coming to it, much less putting it on the dinner table. But dog is a dish in parts of East and South Asia, including certain regions of China and the Philippines. Woof!

Stir-Fried Dog with Coconut Milk

1 lb haunch, cut into bite-sized pieces

1 medium onion, thinly sliced

2 small green chillies, seeded and sliced

4 to 6 mushrooms, sliced

1 cup coconut milk

5 tbs peanut oil

2 tbs soy sauce

2 tbs fresh ginger, chopped

1 tsp ground cumin seed

1 tsp cornflour (mixed with water to form a paste)

salt and pepper to taste

fresh mint leaves

Method

1. Heat oil in wok or frying pan, then add meat, stir-frying until lightly browned.

2. Add coconut milk and soy sauce and stir fry for one or two minutes.

3. Add onion, chillies, mushrooms, and seasoning and continue to stir. When the mixture begins to bubble, stir in cornflour paste. Garnish with mint leaves.

Deep-fried Octopus

Seafood-wise, people have probably been eating octopus as long as they have been eating fish. All over the world octopus is eaten, but it's especially popular in Japan and in European countries such as Greece, Portugal, and Spain. People often cook octopus by grilling it, but it is also used in sushi, salads, stews, and rice dishes. Many Jamaicans also enjoy the delicacy.

Ingredients

fresh octopus meat

egg whites

flour or fish-fry batter

spices (salt, pepper, cumin, garlic, bay leaves, oregano, thyme)

olive oil

lemon

marinara sauce

tarter sauce

red wine

red wine vinegar

Method

1. Purchase the freshest octopus that you can find.

2. Boil octopus in salty water for 35 minutes, or until the colour of the meat becomes a vibrant deep purple. The amount of salt will depend on both your taste and the amount of octopus that you are preparing.

3. Pre-cooking the octopus meat will help to eliminate any chewiness.

4. Deep-fry pre-cooked octopus for a mouth-watering appetiser, dipping thin strips first into egg white and then into flour or fish-fry batter. How you prepare the flour or fish fry is up to you, you may add salt, pepper, garlic or any other spices that you enjoy.

5. Deep-fry the battered octopus pieces in a wok or deep fryer until they are a crispy golden brown. Serve deep-fried octopus with lemon or a classic marinara or tarter sauce.

Sauté pre-cooked octopus for another tasty option. Add approximately two pounds of octopus slices to a pan with eight tablespoons of olive oil, 150 ml of red wine, six tablespoons of red wine vinegar, one large chopped tomato, four bay leaves and two teaspoons of dried oregano. Sauté the octopus for an hour, adding wine and water if the sauce begins to dry. Eat with rice, salad and garlic bread.
