January 9 was celebrated as Jamaica Blue Mountain Coffee Day. Try this cocktail that highlights the Appleton Estate 12-Year-Old Rare Casks rum, paired with coffee beans for a rich, aromatic experience.

The flavour profile of this cocktail has notes of dried fruit, hazelnut, cocoa, molasses, orange peel, vanilla, coffee, and oak.

INGREDIENTS

2 oz (60 ml) Appleton Estate 12-Year-Old Rare Casks

12 coffee beans (lightly cracked, not ground)

Optional: 0.5 oz simple syrup

Garnish: 3–4 whole coffee beans

DIRECTIONS

1. Lightly muddle the coffee beans (just crack them, do not grind).

2. Add rum and ice, then stir gently to infuse the coffee aroma.

3. Strain into a double old-fashioned glass over one large ice cube.

4. Garnish with 3–4 whole coffee beans for aroma and visual appeal.
